RECIPE TIME!!!

HI ALL THE BUDDIES!!

So...WHO DOESN'T LOVE A GOOD, HEALTHY AND FILLING RECIPE??!!
Well.. Have I got one for you!!
You might just die....

READY?!! OK...DON'T DIE!!!

First of all.. this recipe has Quinoa in it. (keen-wah)
And if you haven't tried Quinoa you need to try it. Don't be afraid to try it or cook it. It is SO EASY and SO GOOD FOR YOU!! My daughter keeps telling me "MOM..its a super food!!"

Here's a quick schooling on QUINOA!
Quinoa is what's called a complete protein...meaning it contains all nine of the essential amino acids that cannot be made by the body and therefore must come from food. While no single food can supply all the essential life sustaining nutrients...Quinoa comes as close as any other in the plant or animal kingdom. 
Plus...its gluten free!

OK....class dismissed!

I basically substitute Quinoa for anything I use rice or oats for...

OK! LETS EAT!!

CHICKEN & QUINOA ENCHILADA BAKE


First: bake 4-5 chicken boobs for about 35-40 minutes... seasoned with salt, pepper, garlic salt, paprika and cumin.
let cool and shred.


Next: Line a baking dish with about a 1/2 Cup of enchilada sauce and 1/2 Cup of salsa... top with a layer of tortillas.



In a large bowl mix together:
2 C shredded chicken
2 1/2 C cooked Quinoa
1 can Black beans (rinsed)
1 can corn (drained)
1 sm can green chilis
1/2 C chopped onion
1/2 C cheddar cheese
2 C enchilada sauce
1 C salsa
season to taste
(I used salt, pepper, garlic salt, cumin and season salt)


Spread mixture over tortillas. Top with shredded Monterey Jack cheese and cover with foil.



Bake for 25 minutes, then uncover and broil on high until lightly browned and bubbly. (about 4 minutes)

SMELL IT???!!!

Serve topped with sour cream, avocado and cilantro.

This recipe fills a 13x9 baking dish and feeds a small army... or my son for one meal. :)


And to wash it all down...
Here is my most favorite Juicing recipe ever!
I seriously have to have at least one of these a day....

1 Fresh Beet (make sure you peel it)
1 large grapefruit
1 lime
1 large apple
4 carrots

ITS SO GOOD!!! YOU'RE WELCOME!!

Ok..and for the finale....Here's the quick tutorial on how to cook Quinoa. 
1/2 C Quinoa
1 Cup water
{this makes 1 1/2 C of cooked Quinoa}
First...after you  measure out the amount you want to cook... you need to rinse it. (I used both red and white quinoa)




I just put the Quinoa in a pint mason jar and fill the jar with water....
I let it sit for a few minutes and all the Quinoa settles to the bottom. 
Then I just pour off the liquid. I do this a couple of times. 


Pour the rinsed Quinoa into a pan and add the 1 C Water.
Bring to a boil, cover and reduce heat to simmer.
Cook for about 15 minutes or until all the water has cooked out.



{If you have a rice cooker...you can skip the pan step and put it right on in there!!!}
You know the Quinoa is done when the white is translucent...isn't it so pretty?!!

I'm going to try your drink real soon...havent thought about the grapefruit and lime, thank you! we cook extra quinoa, keep it in the fridge and then add it to like taco meat, spaghetti sauce or anything else...it adds bulk and nutrition and fills you up. THANK you so much for sharing some healthy stuff, your awesome!
